Mmmm, Chicken Salad. I am a little bit of a Chicken Salad connoisseur. I almost never make it the same way twice and thats one of the things I love about Chicken Salad – there are so many variations – so many wonderful combinations.
When I’m wanting to feel fancy – I just add fresh cilantro. Guess what? We’re feeling fancy today. Lets get started.
Ingredients: 2 cans chicken, handful of cashews, fresh cilantro, 1 shallot, grapes, button mushrooms, sweet bell peppers – not pictured: mayonnaise, mustard and paprika.
First – lets chop up those mushrooms: CHOP CHOP!
And then the cilantro, red bell peppers and grapes – CHOP CHOP CHOP!
Here’s a shallot. Get to know this little guy – you love him. You want to write him bad poetry that you’re super proud of. He’s the first onion you don’t want to cheat on him with The Garlic. Also? This part of Chicken Salad is great for getting out your frustrations – watch.

CHOP IT! Chop, Chop!
And we’re not done yet – have you had a genuinely hard day? Smashing that shallot not enough for ya, huh? No problem.
Go ahead and beat the living nuts out of those cashews.
Add everything to your bowl, including the chicken, mayo, mustard and a sprinkling of paprika.
Mix it up.
And serve it up. To keep this gluten free – forgo the bread or pita, crackers or wraps and wrap it up in some Romaine lettuce, or large, dark leafy lettuce. The darker the greens the more nutrients there are.
And there you have it.
I may just have to make that for lunch today. Hmm…w/ substitutions of course, cause I normally don’t buy those ‘fancy’ groceries!
