Sweet Potato Fries
I don’t use a recipe for these suckers – I just kind of wing it. Here’s what I did today:
Grabbed 2 sweet potatoes (any number will do)
Sea Salt – the coarser, the better
Preheat oven to 400.
Cut potatoes into wedges, as big or little as you please. Toss in a bowl with some EVOO, salt and pepper. Just enough to coat the taters. Lay em on a pan – stick em in the oven and wait. Um, about 25 min for the thickness that I cut. I poke at them once or twice with a spoon while they’re in the oven to make sure they get evenly browned, but I like some of the fries to be pretty dark so I just kind of forget about them.
Eat them at once, they’re to die for!
**I do wash my potatoes. The End.
